I frequently visit Marseillan (by car) It worth a detour by boat whilst crossing the Etang de Thau. Also somewhere to take shelter if the weather catches you out. This is a large body of water to be treated with respect. As if potential strong winds are not enough of an issue the oyster beds on the west side are not something you want to tangle with.
The small harbour is very picturesque, with many good cafe and restaurants. The main feature of interest is the Noilly Prat distillery which is visible from the quay. You can take guided tours which are very interesting. Also you can buy the full range including their special amber Noily Prat which is only available from here or their store in Paris, no where else. The local white wine Picpoul de Pinet is excellant. It is a rip off in the UK, often £20 in a restuarant as it is considered trendy. Here it is a bargain, try it. The boxes of chocolates from Noilly Prat are also very good.
It is a ten minute walk into town.
